NOSE
Exceedingly smooth on the nose. The smoky bacon notes smooth and temper to soft peat smoke over time. There is briny salt with sweet heather honey and slight florals that hold the smoke in check, giving great balance. Vanilla oak from the cask mingle and balance the bouquet, so everything is beautifully integrated.
TASTE
Vigour from the alcohol and casking give an initial burst of pepperiness, along with spicy ginger along with peat smoke. This is again tempered with honeyed sweetness, dark chocolate, cocoa and fresh ground coffee. The sweetness and saltiness balanced elegantly along with the peat and spice gives a beautifully integrated malt.
FINISH
Medium to long finish with the maritime freshness cutting through. The sweetness and vanilla notes mix with the coffee, cocoa and chocolate and give the finish a linger. Then to the end the oak gives the mouth tobacco leaf dryness.

Caol Ila - 17 Year Old (2007) Halcyon Spirits Release #5's home is Distillery Location distillery, in the Islay region of Scotland.Caol Ila is derived from Gaelic Caol Ìle for "Sound of Islay" in reference to the distillery's location overlooking the strait between Islay and Jura. It was founded in 1846 by Hector Henderson. The distillery did not fare well, and changed hands in 1854 when Norman Buchanan, owner of the Isle of Jura Distillery, took over.
In 1863 the business was acquired by Bulloch Lade & Co, of Glasgow, traders in whisky stocks. According to the 1871 census, Duncan Johnston was the Distillery Manager at the time. Duncan was the nephew of John Johnston of Lagavulin and cousin to the Laphroaig Johnstons and so the family were involved with yet another distillery on the island. By the 1880s over 147,000 gallons of whisky were produced there each year.

Cancellations and returns are subject to the following:
- Any cancelled or returned products must be returned to us in the same condition as initially sold and in original packaging – we will process the refund within 14 days or receiving the product(s) back in our premises – our returns address is :

- You will be responsible and liable for the cost of returning the good(s) to us in all cases, except in the scenario where you have received an item that is faulty or damaged condition.
- Returns must include a printed statement confirming customer name, initial order number, customer address and reason for cancellation or return.
- Returns must be packed with sufficient void fill and in strong packaging to prevent possible damage in transit.
- Our refund will comprise 2 components – 1 part for the cost of the bottle(s) purchased (“Cost Refund”) and 1 part for the associated shipping cost initially paid (“Postage Refund”).
- We will reduce the refund value of the Cost Refund, potentially to zero, to reflect any reduction in value to the product(s) caused by damage and/or deterioration arising from poor customer handling and/or caused by courier damage on the return to us.
